關(guān)于粽子的江湖，從來都藏著南北之間最溫柔的“較勁”。沒有劍拔弩張的爭執(zhí)，只有飯桌上捧著熱粽時，各自眼里藏不住的驕傲，把一方水土的脾氣，全揉進(jìn)了那片小小的粽葉里。

北方的粽子，總帶著股爽利的實在勁兒。老北京端午的蜜棗粽，是家家戶戶廚房的標(biāo)配，圓滾滾的糯米里嵌著兩三顆金絲蜜棗，沒有多余的花哨餡料，煮到米粒幾乎要在鍋里化開，撈出來放在白瓷盤里，咬開時能拉出細(xì)細(xì)的黏絲。天津人偏愛江米小棗粽，吃的時候要蘸上厚厚的白糖，甜意順著舌尖漫到喉嚨，連粽葉的清香氣都裹著胡同里的熱乎氣。陜北的黃米粽最是特別，用糯性十足的黃米代替白糯米，包上紅小豆，出鍋時泛著透亮的金黃色，咬一口帶著雜糧獨(dú)有的醇厚香，像黃土高原上曬了整日的陽光，扎實又暖心。

往南走，粽子的模樣忽然就變得活色生香起來。江浙一帶的鮮肉粽是出了名的“狠角色”，嘉興的枕頭粽個頭敦實，拆開粽葉時油光會順著指尖往下淌，肥瘦肉在長時間的燜煮里早已融為一體，精肉不柴，肥肉的油全浸進(jìn)了每一粒糯米里，連粘在粽葉上的那層鍋巴，都要被人小心翼翼地刮下來吃掉。湖州的粽更是講究，用箬葉裹出細(xì)長的四角形，里面的鮮肉提前用醬油腌透，出鍋時咸香撲鼻，是老湖州人端午清晨最惦記的那一口。

到了嶺南，粽子的花樣直接把“豐盛”兩個字寫在了粽葉上。廣東的肇慶裹蒸粽，用的不是普通箬葉，而是特大號的冬葉，一個粽子就有兩三斤重，里面塞著五花肉、咸蛋黃、綠豆，甚至還有香菇和蝦仁，煮上整整十幾個小時才能出鍋，一家人分著吃一個都足夠飽。潮汕的雙烹粽最是巧妙，一半是甜的豆沙，一半是咸的鮮肉，甜與咸在嘴里撞出奇妙的滋味，像潮汕人骨子里兼容并蓄的性子，什么味道都能調(diào)和得恰到好處。廣西的巴馬香豬粽更是帶著山野的靈氣，用當(dāng)?shù)靥禺a(chǎn)的香豬肉做餡，香而不膩，咬開時能嘗到山野里跑出來的鮮氣。

還有些藏在角落里的小眾粽子，像散落江湖的隱世高手。貴州的灰水粽，用稻草燒的灰濾出堿水浸泡糯米，煮出來的粽子通體金黃，蘸著蜂蜜吃，帶著淡淡的草木清香，是大山里藏了千百年的智慧。云南的七彩花米粽，用染了植物色素的彩色糯米包上鮮花餡，剝開時像捧著一小團(tuán)彩虹，咬開時唇齒間都是花香，把云南的爛漫全裹進(jìn)了粽葉里。
